When making ice cream at home, there are some tips you should follow to make sure your ice cream is creamy, smooth, and safe to eat.

Churning the Ice Cream
When you start churning the ice cream, keep the machine going and don't stop.  The churning action mixes air into the ice cream and makes it smooth and have more volume.  If you stop the churning process, the cold parts of the mixture will start to form crystals and make the ice cream grainy.

Salt and Ice
If you are using an electric ice cream maker that required salt and ice, it is important to follow the instructions on the proper amounts of salt and ice to use.  If too much salt is used, the ice cream will freeze too fast and will not turn out smooth.  If not enough salt is used, then the ice cream may not freeze. 

Food Safety
If your ice cream recipe says to use eggs, it is a good idea to heat the heats first to kill any potential salmonella bacteria.  To do this, heat the egg mixture to 160 degrees before adding it to the ice cream mixture.  You can also use pasteurized eggs.
When storing the ice cream, it should be placed in an airtight container.  It can be stored for up to one week in the freezer.
